Ingredients
  

For the Chicken:
  • 2 chicken breasts boneless, skinless
  • 1 cup cornstarch
  • 2 eggs beaten
  • 1 cup panko optional
  • Salt and pepper to taste
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika optional
For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/3 cup sweet chili sauce
  • 2 tbsp sriracha sauce
  • 1 tsp soy sauce
For the Rice Bowl:
  • 1 cup cooked rice
  • 1 bunch scallions finely chopped
  • Sesame seeds
  • 2 Persian cucumbers optional
  • 1 Avocado sliced

Method
 

  1. Preheat the air fryer to 390°F.
  2. Cut chicken breasts into bite-sized pieces; season with salt, pepper, garlic powder, and optional smoked paprika.
  3. Place cornstarch, beaten eggs, and panko breadcrumbs into three separate shallow dishes.
  4. Dip each chicken piece first into the cornstarch, then into the beaten eggs, and finally into the panko breadcrumbs, ensuring a thorough coating.
  5. Place coated chicken pieces in a single layer in the air fryer basket, ensuring they do not touch. Cook in batches if necessary.
  6. Cook for 16-20 minutes, flipping halfway through, or until the internal temperature reaches 165°F.
  7. While the chicken air fries, mix mayonnaise, sriracha sauce, sweet chili sauce, and soy sauce in a bowl.
  8. Once chicken is done, drizzle Bang Bang Sauce over the top or serve on the side for dipping.

Notes

Ingredient Swap: I've totally used boneless, skinless chicken thighs when I'm out of breasts, and they come out wonderfully juicy, sometimes even more so.
Just make sure
