- Preheat the air fryer to 390°F.
- Cut chicken breasts into bite-sized pieces; season with salt, pepper, garlic powder, and optional smoked paprika.
- Place cornstarch, beaten eggs, and panko breadcrumbs into three separate shallow dishes.
- Dip each chicken piece first into the cornstarch, then into the beaten eggs, and finally into the panko breadcrumbs, ensuring a thorough coating.
- Place coated chicken pieces in a single layer in the air fryer basket, ensuring they do not touch. Cook in batches if necessary.
- Cook for 16-20 minutes, flipping halfway through, or until the internal temperature reaches 165°F.
- While the chicken air fries, mix mayonnaise, sriracha sauce, sweet chili sauce, and soy sauce in a bowl.
- Once chicken is done, drizzle Bang Bang Sauce over the top or serve on the side for dipping.
