Method
- Whisk all marinade and dressing ingredients in a large jug. Pour half of the marinade into a large, shallow dish. Refrigerate the remaining marinade for later use as dressing.
- Add the chicken to the marinade in the dish. Marinate the chicken for 15-30 minutes, or up to two hours in the refrigerator if time permits. While the chicken marinates, prepare and mix all salad ingredients in a large bowl.
- Heat 1 tablespoon of oil in a grill pan or on a grill plate over medium-high heat. Grill the chicken on both sides until browned and cooked through.
- Allow the chicken to rest for 5 minutes. Slice the chicken and arrange it over the salad. Drizzle the salad with the remaining untouched dressing. Serve with lemon wedges.
