Ingredients
  

  • 2 lb Zucchini
  • 1/4 cup Olive oil
  • 1/2 tbsp Dried oregano
  • 1 tsp Dried basil
  • 3/4 tsp Garlic powder
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper

Method
 

  1. Preheat the grill or a grill pan to medium-high heat (approximately 400°F / 204°C) for at least 10 minutes.
  2. Trim the ends off the zucchini and slice them lengthwise into 1/4-inch thick planks, using a mandoline for precision.
  3. Whisk the olive oil, dried oregano, dried basil, garlic powder, sea salt, and black pepper together in a small mixing bowl.
  4. Arrange the zucchini in a single layer on a large sheet pan or cutting board and brush both sides with the marinade.
  5. Place the zucchini slices onto the hot grill grates over direct heat.
  6. Grill the zucchini for 2 to 3 minutes per side until tender and charred with grill marks.
