  • 12 oz pasta penne or fettuccine
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup cherry tomatoes
  • 1 cup zucchini sliced
  • 2 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for garnish

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until it reaches a tender consistency.
  3. Drain the pasta and set it aside.
  4. Heat the olive oil in a skillet.
  5. Add the garlic and sauté for one minute.
  6. Incorporate the vegetables and sauté until they are soft.
  7. Stir in the cooked pasta.
  8. Add the Parmesan, salt, and pepper.
  9. Toss the ingredients thoroughly until evenly coated.
  10. Serve the dish warm, garnished with fresh basil.
