Ingredients
  

Cake
  • 1 egg
  • 1/4 cup oil vegetable or canola
  • 1 tsp. vanilla
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 1/2 cups flour
Streusel
  • 2 T butter melted
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 2 T Flour
  • 1/2 cup walnuts chopped, optional
Icing Drizzle
  • 1 T butter room temperature
  • 3/4 cup powdered sugar
  • 1 T milk extra, if needed

Method
 

Cake
  1. Preheat the oven to 375°F.
  2. Beat the egg in a mixing bowl and stir in the sugar, milk, salt, oil, and vanilla.
  3. Spoon the flour into a measuring cup and add it to the batter. Sprinkle baking powder over the flour and gently mix it into the top half of the flour layer. Stir the flour mixture into the batter until combined, then pour into a greased or parchment-lined 9x9-inch baking dish.
Streusel
  1. Melt the butter in a microwave-safe bowl, then stir in the brown sugar, cinnamon, and flour until well combined, adding nuts if desired.
  2. Sprinkle the streusel over the cake. Use a finger or the end of a wooden spoon to poke the streusel halfway into the batter 12 to 18 times at random.
  3. Bake for 25 to 30 minutes until a toothpick inserted in the center comes out with moist crumbs. Do not overbake.
Icing (optional)
  1. Mix the butter and powdered sugar for the optional icing, thinning with milk to the desired consistency, and drizzle over the cake.
