Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups mixed greens spinach, arugula, romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup crumbled feta cheese
  • Fresh herbs parsley, basil; for garnish

Method
 

  1. In a bowl, combine olive oil, lemon juice, oregano, salt, and pepper. Add the chicken breasts and coat them well. Marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes per side or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, olives, and feta cheese.
  4. Slice the grilled chicken and place it on top of the salad. Drizzle with additional olive oil and lemon juice, if desired. Garnish with fresh herbs.
  5. Gently toss the salad to combine, and serve immediately for the best flavor.
