Method
- In a bowl, combine olive oil, lemon juice, oregano, salt, and pepper. Add the chicken breasts and coat them well. Marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes per side or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, olives, and feta cheese.
- Slice the grilled chicken and place it on top of the salad. Drizzle with additional olive oil and lemon juice, if desired. Garnish with fresh herbs.
- Gently toss the salad to combine, and serve immediately for the best flavor.

Ingredient Substitution: I often find myself without cherry tomatoes, so I've successfully swapped in diced Roma tomatoes or even roasted red bell peppers for a different sweetness.
