Ingredients
  

  • 1 bunch red radishes finely cubed (about 1 1/2 cups)
  • 1/2 cup parsley finely chopped
  • 1 lemon juice or to taste
  • 1 tablespoon olive oil
  • Kosher salt and freshly ground black pepper to taste

Method
 

  1. Combine radishes and parsley in a small serving bowl. Add lemon juice, salt, and pepper, then toss to coat.
  2. Add olive oil and toss again. Taste and adjust seasoning as needed before serving.

Notes

Slicing Style: I prefer using a mandoline to get paper-thin slices because they soak up the lemon juice beautifully, but a sharp knife works just fine for a heartier, rustic crunch
