Method
- Cook the pasta according to package instructions until al dente and preheat the oven to 400°F.
- Season both sides of the chicken with Cajun seasoning. Heat olive oil in a large skillet, then add the chicken and cook for 6 to 7 minutes, flipping halfway through, until fully cooked.
- Melt butter in a medium saucepan, then whisk in flour and stir constantly for 1 minute. Gradually add milk and bring to a simmer, stirring continuously. Simmer for 2 to 3 minutes, remove from heat, and stir in both cheeses until smooth.
- Toss the pasta and Alfredo sauce with the chicken in the skillet. Transfer the mixture to a greased 13x9-inch pan, top with cheddar cheese, and bake for 5 to 10 minutes until melted. Optionally, broil briefly at the end to brown the cheese.
- Serve immediately, garnished with fresh chopped parsley if desired.
