Method
- Combine all cheese sauce ingredients except water in a food processor or blender. Blend until smooth, adding water by the tablespoon if necessary to reach the desired consistency. Set aside.
- Heat a large pan over medium heat and add the frozen peppers and onions. Cook for 4-5 minutes until thawed, then stir in the pulled chicken, beans, and corn.
- Cook for an additional 2-3 minutes until the mixture is thoroughly heated.
- Remove the pan from heat, add the cheese sauce, and stir until well combined.
- Place 8 ounces of the chicken mixture onto each tortilla and roll tightly.
- Heat a griddle or nonstick skillet over medium heat. Grill the burritos for 30-60 seconds per side until golden brown on all sides.

Sauce Texture: I really recommend blending the cottage cheese until it is completely silky because any leftover lumps can be a bit distracting once the burritos are heated through.
