  1. Hard boil the eggs by placing them in a pot of water. Bring to a boil and then cover and remove from heat. Let sit for 12 minutes.
  2. Fill a bowl with ice water and transfer the eggs to the ice bath. Let chill for at least 5 minutes.
  3. Peel the eggs and cut them in half lengthwise.
  4. Remove the yolks and place them in a mixing bowl.
  5. Add mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper to the yolks and mix until smooth.
  6. Spoon or pipe the filling back into the egg whites.
  7. Sprinkle with chives and paprika.
  8. Serve chilled.
