Ingredients

  • 2 boneless ribeye or sirloin steaks 6 oz each
  • 12 oz pasta spaghetti, fettuccine, or penne
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • fresh basil or parsley for garnish

Method

  1. Boil salted water in a large pot. Cook pasta until al dente (8–10 minutes). Drain pasta and reserve ½ cup of the pasta water.
  2. Heat olive oil in a skillet. Season steaks with salt and pepper. Sear steaks for 4–5 minutes on each side for medium-rare. Let steaks rest before slicing.
  3. In the same skillet, sauté garlic in olive oil and butter until fragrant. Add heavy cream and Parmesan. Whisk to combine until the sauce thickens.
  4. Toss the cooked pasta in the creamy sauce. Add reserved pasta water as needed. Stir in the sliced steak just before serving.

Notes

Ingredient Swap: I've found that if I'm out of fresh basil, a sprinkle of dried Italian herbs works wonderfully to add that aromatic touch, though fresh truly makes it pop.
