How to Make Zucchini Noodle Chicken Alfredo
- Create thin zucchini noodles using a spiralizer or peeler. Microwave for 1-2 minutes, then thoroughly drain excess liquid.
- Melt butter in a large skillet over medium heat. Add sliced chicken, salt, pepper, and minced garlic. Cook for about 7 minutes until the chicken is done and the garlic is fragrant. Set the cooked chicken aside.
- In the same skillet, combine heavy cream, Parmesan cheese, and chopped parsley. Bring to a boil, then simmer for 3-5 minutes until the sauce thickens.
- Return the chicken to the skillet and stir to coat it in the sauce. Add the prepared zucchini noodles and toss gently until well coated and slightly softened.
- Dish immediately. Garnish with extra Parmesan cheese and fresh parsley.
