For the Salmon
  • 2 tablespoons Olive oil
  • 4 fillets Salmon fillets Fresh, skin-on
  • 1 teaspoon Kosher salt
  • 1 teaspoon Black pepper
For the Creamy Garlic Sauce
  • 2 tablespoons Butter
  • 4 cloves Garlic Minced
  • 1 cup Cherry tomatoes
  • 1 cup Heavy cream
  • 1 teaspoon Kosher salt For the sauce
  • 1 teaspoon Dried basil
  • 1/4 teaspoon Cayenne pepper
  • 1/2 cup Shredded parmesan cheese
  • 2 cups Chopped spinach
  • 1/4 cup Fresh basil To finish

Method
 

Cooking Steps
  1. Heat the olive oil in a pan over medium heat.
  2. Season the salmon fillets with kosher salt and black pepper, then cook for about 4-5 minutes on each side.
  3. Remove the salmon from the pan and set aside.
  4. Melt the butter in the same pan and add the minced garlic. Sauté until fragrant.
  5. Add the cherry tomatoes, cooking until they start to burst.
  6. Stir in the heavy cream, kosher salt for the sauce, dried basil, and cayenne pepper; simmer until thickened.
  7. Incorporate shredded parmesan cheese, stirring until melted.
  8. Fold in the chopped spinach and fresh basil, letting them wilt slightly.
  9. Return the salmon to the pan and spoon the sauce over the fillets.
  10. Serve immediately while hot, garnished with extra fresh basil if desired.
