Ingredients
  

Main Ingredients
  • 1 pound Boneless Skinless Chicken Breast Cut into small cubes.
  • 1 can (15 ounces) Black Beans Drained and rinsed.
  • 1 cup Corn Frozen or canned, thawed if frozen.
  • 1 cup Diced Bell Peppers Red, yellow, or green.
  • 1 small Onion Finely chopped.
  • 2 cloves Garlic Minced.
Spices
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Powder
Wrapping and Topping
  • 4 large Flour Tortillas
  • 1 cup Shredded Cheese Cheddar or Monterey Jack.
  • to taste Sour Cream or Greek Yogurt For serving.

Method
 

  1. Dice the chicken, rinse the beans, thaw the corn, chop the peppers and onion, and mince the garlic.
  2. Heat oil in a skillet over medium heat, sauté the onion for 3-4 minutes until translucent, then add the garlic and cook for 1 minute.
  3. Add the chicken to the skillet, sprinkle with spices, and cook for 6-8 minutes until fully cooked.
  4. Stir in the black beans, corn, and bell peppers, then heat through for an additional 3-4 minutes.
  5. Remove the skillet from the heat and allow the filling to cool for a few minutes.
  6. Preheat the air fryer to 375°F (190°C).
  7. Assemble the burritos by placing the filling and cheese in the center of each tortilla, folding the sides, and rolling them tightly.
  8. Spray the air fryer basket with cooking spray, place the burritos seam-side down, and cook for 10-12 minutes, flipping them halfway through.
  9. Remove the burritos from the air fryer and let them sit for one minute before serving.
  10. Serve the burritos with sour cream or Greek yogurt.
