Method
- Dice the chicken, rinse the beans, thaw the corn, chop the peppers and onion, and mince the garlic.
- Heat oil in a skillet over medium heat, sauté the onion for 3-4 minutes until translucent, then add the garlic and cook for 1 minute.
- Add the chicken to the skillet, sprinkle with spices, and cook for 6-8 minutes until fully cooked.
- Stir in the black beans, corn, and bell peppers, then heat through for an additional 3-4 minutes.
- Remove the skillet from the heat and allow the filling to cool for a few minutes.
- Preheat the air fryer to 375°F (190°C).
- Assemble the burritos by placing the filling and cheese in the center of each tortilla, folding the sides, and rolling them tightly.
- Spray the air fryer basket with cooking spray, place the burritos seam-side down, and cook for 10-12 minutes, flipping them halfway through.
- Remove the burritos from the air fryer and let them sit for one minute before serving.
- Serve the burritos with sour cream or Greek yogurt.
