- Combine the lettuce, chopped chicken, Caesar dressing, Parmesan cheese, and croutons in a large bowl. Toss thoroughly with tongs. Season with salt and pepper to taste, adding more dressing if necessary, and set aside.
- Warm the tortillas in a large pan over medium heat for 15 to 30 seconds per side until pliable. Transfer to a plate and cover with a kitchen towel, or alternatively, microwave them between paper towels for 15 to 30 seconds.
- Lay the tortillas on a clean surface and divide the salad mixture evenly among the centers. Fold in the opposite sides and roll each into a burrito shape. Secure with a toothpick if needed and serve either whole or cut in half.
