Ingredients
  

  • 3 cups chopped romaine lettuce
  • 1 1/2 cups chopped cooked chicken grilled, fried, or rotisserie
  • 1/3 cup Caesar dressing
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 cup homemade croutons
  • Kosher salt and freshly ground black pepper to taste
  • 4 flour tortillas or wraps 10-inch

Method
 

  1. Combine the lettuce, chopped chicken, Caesar dressing, Parmesan cheese, and croutons in a large bowl. Toss thoroughly with tongs. Season with salt and pepper to taste, adding more dressing if necessary, and set aside.
  2. Warm the tortillas in a large pan over medium heat for 15 to 30 seconds per side until pliable. Transfer to a plate and cover with a kitchen towel, or alternatively, microwave them between paper towels for 15 to 30 seconds.
  3. Lay the tortillas on a clean surface and divide the salad mixture evenly among the centers. Fold in the opposite sides and roll each into a burrito shape. Secure with a toothpick if needed and serve either whole or cut in half.
