- Dry the chicken thoroughly using paper towels.
- Combine the chicken pieces in a large bowl with Italian seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper, then toss well to ensure an even coating.
- Heat olive oil in a large cast iron skillet over medium-high heat until shimmering, then reduce to medium and arrange the chicken in a single layer. Cook for 5-8 minutes, flipping every 2-3 minutes until golden brown and the internal temperature reaches 150-155°F (66-68°C).
- Lower the heat to low, add butter pieces to the skillet, and stir to coat the chicken. Continue cooking for 1-3 minutes until the internal temperature reaches 165°F (74°C), then garnish with fresh parsley if desired.
