- Combine the sweet potato, onion, bell pepper, oil, paprika, 1 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl and toss until well mixed.
- Arrange the potato mixture in a single layer in an air-fryer basket, working in batches to avoid overcrowding. Cook at 400°F for approximately 14 minutes, tossing halfway through, until the potatoes are tender and browned in spots.
- Transfer the potato mixture to a platter and garnish with scallions and dill.
