Ingredients
  

  • 1 large sweet potato cut into 1/2" cubes
  • 1 small yellow onion finely chopped
  • 1 small red bell pepper seeded and finely chopped
  • 3 tbsp Napa Valley extra-virgin olive oil
  • 1 1/2 tsp smoked paprika
  • Kosher salt
  • freshly ground black pepper
  • 2 scallions thinly sliced
  • fresh dill chopped, for serving

Method
 

  1. Combine the sweet potato, onion, bell pepper, oil, paprika, 1 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl and toss until well mixed.
  2. Arrange the potato mixture in a single layer in an air-fryer basket, working in batches to avoid overcrowding. Cook at 400°F for approximately 14 minutes, tossing halfway through, until the potatoes are tender and browned in spots.
  3. Transfer the potato mixture to a platter and garnish with scallions and dill.
