Method
- Brown the ground beef in a medium skillet.
- Add the taco seasoning according to the package instructions.
- Fill each tortilla with beef, beans, tomatoes, and chilies.
- Line the air fryer basket with foil if desired and place the tortillas inside.
- Pour the enchilada sauce evenly over the assembled enchiladas.
- Sprinkle the cheese evenly over the top.
- Air fry at 360°F for 5 minutes.
- Carefully remove from the air fryer, add toppings, and serve.

Notes
Depending on the size of your Air Fryer, it may be necessary to cook in 2 batches. Cook for an additional 1-2 minutes if cheese is not fully melted as all air fryer cook times vary just a bit.
The gluten-free tortillas work the best if using the Mission Gluten-Free Flour Tortillas, these are what I used in these pictures in the post. They are the best size and they stay together better than corn tortillas.
Nutritional information will vary based on exact amounts used, for instance, you will not likely use the entire can of beans on 1 enchilada.
