Ingredients
  

  • 4 bone-in, skin-on chicken thighs
  • 5 garlic cloves peeled and lightly crushed
  • 1/2 teaspoon dried sage or finely chopped fresh sage
  • 3/4 teaspoon dried rosemary or finely chopped fresh rosemary
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place chicken thighs skin-side up in a cast iron skillet or heavy baking dish. Pat skin dry with paper towels.
  3. Season both sides of chicken evenly with salt and pepper. Sprinkle garlic powder, sage, and rosemary over the skin.
  4. Scatter the garlic cloves around the chicken in the pan.
  5. Roast uncovered on the center rack for 45 minutes.
  6. Reduce oven temperature to 325°F (165°C) and continue roasting for another 10–15 minutes, until skin is golden and internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for 5 minutes before serving.
