Method
- Preheat oven to 400°F (200°C).
- Place chicken thighs skin-side up in a cast iron skillet or heavy baking dish. Pat skin dry with paper towels.
- Season both sides of chicken evenly with salt and pepper. Sprinkle garlic powder, sage, and rosemary over the skin.
- Scatter the garlic cloves around the chicken in the pan.
- Roast uncovered on the center rack for 45 minutes.
- Reduce oven temperature to 325°F (165°C) and continue roasting for another 10–15 minutes, until skin is golden and internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for 5 minutes before serving.
