Ingredients
  

  • 3 Salmon Fillets skin on or off
  • 2 tbsp Italian Seasoning divided
  • 4 Cloves Garlic minced
  • 1/4 cup Panko Bread Crumbs
  • 1/2 cup Parmesan Cheese shredded + 2 tbsp for topping
  • 3 tbsp Fresh Parsley finely chopped
  • 5 tbsp Butter softened to room temperature
  • Salt and Black Pepper to taste
  • 1 Lemon squeezed and sliced for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Smear 2 tbsp of butter on the bottom of a shallow oven-safe dish large enough for 3 salmon fillets.
  2. Generously season the salmon fillets with salt, black pepper, and 1 tbsp Italian seasoning. Place them in the prepared dish and set aside. In a small bowl, combine panko bread crumbs, Parmesan cheese, garlic, 1 tbsp Italian seasoning, parsley, and butter. Mix until combined.
  3. Distribute the mixture evenly over the salmon fillets. Top with additional Parmesan cheese as desired. Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden. If the crust needs more browning, broil for 1-2 minutes, then remove. Serve immediately.

Ingredient Swap: I've tried Pecorino Romano instead of Parmesan when I want a really sharp, salty bite, and it’s absolutely delicious, just a little more assertive.
