Ingredients
  

  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat or other oils
  • 1 whole head garlic
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • flaky sea salt for finishing

Method
 

  1. Preheat the oven to 450°F with a large roasting pan inside.
  2. Rinse and boil potatoes in salted water until barely fork-tender. Drain and dry them.
  3. Add melted duck fat to the hot roasting pan, then toss in the prepared potatoes and seasonings.
  4. Roast for about 55-60 minutes, tossing every 20 minutes until golden brown.
  5. Mix roasted garlic cloves with rosemary and olive oil. Combine with the potatoes for the last 5 minutes of roasting.
