Ingredients

  • 2 pounds party wings
  • tablespoons garlic powder
  • 1 tablespoon baking powder, aluminum free, DO NOT USE baking soda
  • 1 tablespoon paprika
  • 2 teaspoons kosher salt, Diamond Crystal
  • 1 teaspoon freshly cracked black pepper
Honey Hot Sauce
  • ½ cup honey
  • cup Frank's hot sauce
  • tablespoons salted butter
  • ½ teaspoon garlic powder

Method

  1. Remove chicken from the refrigerator 30 minutes before baking. Rinse and pat dry with a paper towel to ensure crispy skin.
  2. Position the oven rack on the upper middle position. Preheat the oven to 425°F.
  3. Combine garlic powder, baking powder, paprika, kosher salt, and black pepper in a small bowl. Whisk to combine.
  4. Place wings in a bowl. Top with the seasoning mixture and toss to coat well.
  5. Place a wire rack inside a baking sheet. Arrange the chicken on the wire rack, then transfer to the oven. Bake for 35 minutes. After 35 minutes, flip the chicken and return it to the oven. Increase the oven temperature to 450°F and bake for another 25 minutes. Check the chicken at the 10-minute mark and continue baking until crispy. If needed, continue baking in 5-minute increments beyond the 25 minutes.
  6. Meanwhile, heat a saucepan over medium heat. Add butter, hot sauce, honey, and garlic powder. Bring the mixture to a simmer and whisk to blend well. Cook for 2 minutes, then set aside.
  7. Place the cooked wings in a large mixing bowl. Top with the sauce and toss until evenly coated. Serve as an appetizer or with rice.

Notes

Ingredient Swap: I've found that using smoked paprika instead of regular paprika in the seasoning mix gives these wings a wonderful, deeper flavor that I really enjoy.
It adds a lovely smoky note.
