Ingredients
  

  • 1 pre-made pie crust
  • 1 cup (240 ml) chopped kale
  • 1 cup (240 ml) diced butternut squash
  • 1 cup (240 ml) sliced mushrooms
  • 1/2 cup (120 ml) diced onion
  • 4 large eggs
  • 1 cup (240 ml) milk
  • 1 cup (240 ml) shredded cheese cheddar or your choice
  • salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onion, mushrooms, and butternut squash in a skillet until they are tender.
  3. Add the chopped kale and continue cooking until it has wilted.
  4. Whisk the eggs, milk, salt, and pepper together in a bowl.
  5. Distribute the sautéed vegetables in an even layer within the pie crust.
  6. Pour the egg mixture over the vegetables and top with cheese.
  7. Bake for 35 to 40 minutes until the quiche is set and the top is golden brown.
  8. Allow the quiche to cool for several minutes before slicing and serving.
