Ingredients
  

  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ½ red onion thinly sliced
  • ½ cup Kalamata olives pitted and sliced
  • ½ cup feta cheese crumbled
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Combine the chopped romaine, cherry tomatoes, cucumber, red onion, and Kalamata olives in a large salad bowl.
  2. Gently fold in the crumbled feta cheese and chopped parsley.
  3. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl until well combined.
  4. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
