Ingredients
  

  • 2 large ripe Hass avocados
  • 2 thick slices of sourdough or other rustic bread
  • 1 small clove of garlic peeled
  • 1 tbsp fresh lime juice from about half a lime
  • 2 tbsp finely chopped fresh coriander
  • 1 tbsp finely diced red onion
  • ½ tsp flaky sea salt plus more for sprinkling
  • ¼ tsp freshly ground black pepper
  • 1 tbsp extra virgin olive oil for drizzling (optional)
  • Pinch of red pepper flakes optional, for garnish

Method
 

  1. Toast sourdough slices in a toaster or on a hot, dry griddle pan for 2-3 minutes per side until golden brown and firm.
  2. Rub the cut side of a peeled garlic clove over one side of each hot toast slice to infuse flavor.
  3. Halve the avocados, remove the pits, and scoop the flesh into a medium bowl.
  4. Mash the avocado gently with a fork to achieve a chunky, rustic texture rather than a smooth paste.
  5. Add lime juice, chopped cilantro, diced red onion, sea salt, and black pepper to the bowl.
  6. Fold the mixture until just combined, then taste and adjust the seasoning with additional salt or lime juice as needed.
  7. Divide the avocado mixture between the toast slices and spread it to the edges using the back of a spoon.
  8. Drizzle with olive oil, sprinkle with red pepper flakes and sea salt, and serve immediately.
