- Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
- Pat each cod fillet dry with a paper towel to remove excess moisture. Arrange the fillets in a single layer in the baking dish.
- In a small bowl, mix lemon juice, olive oil, lemon zest, garlic powder, paprika, salt, and black pepper. Brush or drizzle the mixture evenly over each fillet.
- Bake for 15-20 minutes, depending on thickness, until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- For a slightly crispy top, switch to broil for the last 2 minutes. Watch closely to prevent burning.
- Remove from the oven. Let the cod rest for a minute, then garnish with fresh parsley. Serve immediately.
