- Add olive oil to a large skillet. Cook the chicken over medium-high heat for 3-5 minutes per side, until browned and no longer pink in the center. Remove the chicken and set it aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
- To make the sauce, add butter and melt it. Add garlic and cook until tender. Whisk in the flour until the sauce thickens. Whisk in chicken broth, heavy cream, Parmesan cheese, garlic powder, pepper, and salt. Add the spinach and simmer until the sauce thickens and the spinach wilts. Return the chicken and mushrooms to the sauce. Serve over pasta, if desired.
