Ingredients
  

  • 3 lbs boneless skinless chicken thighs trimmed and cut into bite size cubes
  • 24 oz frozen chopped spinach (2 – 12 oz pkgs)
  • ¼ Cup Butter Melted
  • ½ Cup Cream Cheese Softened
  • 10 1/2 oz can cream of chicken soup
  • 1 oz Package Italian Dressing Mix

Method
 

  1. Place the cut chicken in the bottom of a 6-quart crock pot.
  2. Squeeze the liquid from the thawed spinach.
  3. Place the spinach on top of the chicken.
  4. Mix the remaining ingredients in a mixer until completely combined.
  5. Spoon the cream cheese mixture over everything. Gently mix it with the spinach and chicken using a stirring spatula until well combined, scraping the sides of the insert to prevent any cream cheese mixture from remaining above the ingredients.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours. Stir once or twice throughout the cooking time.
