Method
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat until hot but not smoking. Add chicken and cook for about 6 minutes per side until golden brown.
- Remove chicken from the skillet and set aside. In the same skillet, sauté minced garlic for about 1 minute until fragrant. Add fresh spinach and stir until wilted, about 3 minutes.
- Pour in chicken broth and lemon juice. Stir well, scraping up any bits from the bottom of the pan.
- Return chicken to the skillet. Sprinkle with Parmesan cheese, then transfer everything to the preheated oven.
- Bake for approximately 25 minutes, or until the chicken's internal temperature reaches 165°F (74°C). Allow to rest for 5 minutes before serving.

Ingredient Swap: Sometimes I'm out of fresh spinach, and I've found that a bag of frozen spinach, thawed and squeezed really dry, works wonderfully here.
