Ingredients
  

  • 1 pound ground chicken
  • 2 medium zucchini about 2 cups grated
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • Olive oil for frying
  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika

Method
 

  1. Grate the zucchini, then squeeze out excess moisture with a clean kitchen towel.
  2. In a large mixing bowl, combine ground chicken, grated zucchini, egg, flour, Parmesan cheese, and seasonings. Mix until well combined.
  3. Shape the mixture into small patties, approximately 3 inches in diameter.
  4. Heat olive oil in a skillet over medium heat. Cook the fritters in batches for 4-5 minutes per side, until golden brown.
  5. Drain on paper towels and serve warm.

Notes

Ingredient Swap: I've totally used ground turkey when I didn't have chicken on hand, and it works wonderfully.
Just make sure it's not too lean, or add a tiny bit
