Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken thighs
  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce or tamari
  • 1 tbsp Napa Valley olive oil plus extra for cooking
  • 1 tsp grated fresh ginger
  • 2 cloves garlic minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 1 1/2 cups long-grain white rice Jasmine or Basmati
  • 2 1/2 cups water or chicken broth
  • 1/2 tsp salt for rice
  • 1 cup corn fresh, frozen thawed, or canned
  • 1 cup black beans rinsed and drained
  • 1 red bell pepper finely diced
  • 1/2 red onion thinly sliced or finely diced
  • 1 ripe Hass avocado diced or sliced
  • Fresh cilantro chopped, for garnish
  • 1/2 cup sour cream or Greek yogurt for optional Lime Crema
  • 1 tbsp fresh lime juice for optional Lime Crema
  • 1 tbsp milk or water to thin crema
  • Pinch salt for optional Lime Crema
  • Extra lime wedges, sesame seeds Optional Garnish

Method
