Ingredients
  

  • 2 cups chicken cooked, shredded
  • 1 cup fresh spinach chopped
  • 1 cup artichoke hearts canned, drained and chopped
  • 1 cup Greek yogurt
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs optional, for topping

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant, then stir in spinach until wilted.
  3. Combine cooked chicken, sautéed spinach, artichokes, Greek yogurt, mozzarella cheese, Parmesan cheese, oregano, onion powder, salt, and black pepper in a large bowl. Mix well.
  4. Grease a baking dish. Pour the mixture evenly into it.
  5. Optionally, sprinkle breadcrumbs on top for added crunch.
  6. Bake in the preheated oven for 30–35 minutes, until golden brown and bubbly around the edges.
  7. Allow to cool slightly before serving.

Ingredient Swap: When I'm out of fresh spinach, I've found frozen chopped spinach works wonderfully, just be sure to thaw it completely and squeeze out every last drop of water so your casserole
