Method
- Preheat the oven to 350°F.
- Line cupcake pans with approximately 24 liners.
- Combine the dairy-free milk, apple cider vinegar, and vanilla in a bowl and let the mixture sit for 10 minutes.
- Sift the flour, sugar, baking powder, baking soda, and salt together in a separate bowl.
- Pour the milk mixture and oil into the dry ingredients and stir until just combined.
- Fill each cupcake liner halfway with batter and bake for 22 to 30 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and let cool, then prepare your frosting and frost the cupcakes once they have cooled completely.
