Easy Ground Beef Stuffed Peppers for Weeknights

These easy ground beef stuffed peppers are the perfect weeknight dinner. Loaded with seasoned beef, rice, and cheese for a hearty meal!

Ingredients
  

  • 6 large bell peppers
  • 1 pound (450 g) ground beef 80/20
  • 1 cup (240 ml) cooked long grain white rice
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tablespoons (30 ml) homemade taco seasoning
  • 10 ounces (285 g) diced tomatoes with green chilies 1 can, drained
  • 8 ounces (225 g) tomato sauce 1 can
  • 1 cup (240 ml) shredded cheddar cheese
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Preheat the oven to 375°F and lightly grease a baking dish.
  2. Slice the tops off the peppers, remove the seeds, and stand them upright in the prepared dish.
  3. Brown the ground beef in a skillet over medium heat for 6 to 8 minutes.
  4. Drain the excess fat, add the onion, and cook until softened.
  5. Stir in the garlic and cook for 30 seconds.
  6. Add the taco seasoning, diced tomatoes, and tomato sauce, then simmer for 5 minutes.
  7. Stir in the cooked rice and mix thoroughly.
  8. Spoon the filling into the peppers and cover the dish with foil.
  9. Bake for 30 minutes, remove the foil, top with cheese, and bake for an additional 10 to 15 minutes until the cheese is melted.
  10. Let the dish rest for 5 minutes before serving.

Notes

Meat Choice: I often swap the ground beef for ground turkey or chicken to keep things lighter, but I always add a tiny bit of oil to the pan since those leaner meats can dry out more
