Ingredients
  

  • 6 cups salad greens roughly chopped
  • 1 lb ground turkey
  • 3 tbsp taco seasoning
  • 1 cup black beans
  • 2 cups rice cooked
  • 1/2 lime juiced
  • 2-3 tbsp cilantro chopped
  • 2 cups cherry tomatoes quartered
  • 1 avocado sliced
  • 1 cup Monterey jack or cheddar cheese shredded
  • Greek yogurt taco sauce to taste
Optional
  • additional cilantro to taste
  • additional lime juice to taste
  • salsa
  • jalapeńos
  • tortilla chips

Method
 

  1. Heat a large non-stick skillet over medium heat. Brown the ground turkey for 10-12 minutes. Halfway through cooking, add 3 tablespoons of taco seasoning and combine well. Once the turkey is completely browned, remove it from heat and set aside.
  2. Prepare quick cilantro lime rice. Combine cooked rice, 1/4 to 1/2 juiced lime (adjust to taste), 1-3 tablespoons of chopped cilantro, a pinch of salt, and a pinch of black pepper.
  3. In each serving bowl, add greens, 4 ounces of cooked ground turkey, 1/2 cup of cilantro lime rice, 1/4 sliced avocado, 1/4 cup black beans, 1/4 cup shredded cheese, and 1/2 cup quartered cherry tomatoes.
  4. Top each bowl with Greek Yogurt Taco Sauce, salsa, sour cream, or your favorite creamy ranch dressing.
  5. Combine all ingredients well and enjoy. Top with additional cilantro and lime juice to taste.
