Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon gochujang
  • 1 teaspoon cornstarch
  • 1 cup brown rice
  • 2 cups water
  • 2 cups broccoli florets
  • 1 carrot medium, sliced
  • 2 green onions sliced
  • 1 tablespoon sesame seeds

Method

  1. Rinse brown rice under cold water. Combine with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low. Cover and simmer for 40 minutes, or until the water is absorbed. Fluff with a fork.
  2. In a small bowl, whisk together soy sauce, honey, gochujang, and cornstarch until smooth.
  3. Heat sesame oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon, and cook until browned, about 5 minutes.
  4. Add minced garlic and grated ginger to the beef. Sauté for 1 minute, or until fragrant.
  5. Pour the sauce mixture into the skillet. Stir constantly until it thickens and coats the beef, about 2 minutes.
  6. Meanwhile, steam the broccoli florets and sliced carrot until crisp-tender, about 4 minutes.
  7. Divide cooked rice among bowls. Top with Korean beef and steamed vegetables. Garnish with sliced green onions and sesame seeds.

Notes

Ingredient Swap: I've definitely swapped out the ground beef for ground turkey or even ground chicken when I'm looking for an even leaner meal; they absorb the flavors beautifully, just make sure to
