This keto strawberry spinach salad is fresh, simple, and ready in 15 minutes. The perfect low carb side dish for any healthy meal!

Ingredients
  

For the dressing
  • 60 ml extra virgin olive oil
  • 2 tablespoons red wine vinegar or balsamic vinegar
  • 1-2 tablespoons Lakanto syrup or maple syrup if paleo*
  • 1 tablespoon shallot or onion, very finely minced
  • 1/4 teaspoon kosher salt
  • freshly ground pepper to taste
For the salad
  • 200 g baby spinach
  • 200 g strawberries sliced
  • 3 tablespoons basil leaves ribonned
  • 60 g pecans or walnuts lightly toasted and roughly chopped
  • 40 g feta or goat cheese optional

Method
 

  1. Mix all dressing ingredients in a small bowl and set aside.
  2. Toss the baby spinach, strawberries, pecans, and optional goat cheese in a salad bowl. Add the dressing immediately before serving.

Notes

Please note that you can lower carbs significantly by reducing the amount of strawberries (they can go a long way after all). Though I must say that I like the added nutritional benefits of said berries, so I don't mind digging in (within reason!).
