- Generously season the chicken with salt, pepper, onion powder, garlic powder, and 2 teaspoons of Italian seasoning blend.
- Heat a large skillet over medium-high heat. Add 2 tablespoons of ghee or oil. Once sizzling hot, add the chicken in a single layer. Brown one side, then stir and continue to cook, stirring occasionally for 1-2 minutes or until cooked through. Transfer the cooked chicken to a plate.
- Lower the heat to medium. Add the remaining tablespoon of ghee, then add the zucchini. Lightly season with salt, pepper, and the remaining teaspoon of Italian seasoning blend. Cook until barely softened. Add the garlic and cook for another 30 seconds. Return the chicken to the skillet, then add the lemon zest and juice. Stir and cook to heat through, then remove from heat.
- Serve alone, over grain-free noodles, or with cauliflower rice for a low-carb option. Enjoy!

Ingredient Swap: I've totally used chicken breasts when I'm out of thighs, just be careful not to overcook them, they dry out faster than the thighs do.
