Ingredients
  

  • 4 boneless, skinless chicken breasts about 1 pound
  • 3 cloves fresh garlic minced
  • 2 tablespoons sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 cups mixed vegetables broccoli and bell peppers
  • 2 tablespoons toasted sesame seeds for garnish
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger root minced

Method
 

  1. Cut chicken into bite-sized pieces. Mince garlic and ginger. Chop broccoli and bell peppers.
  2. Whisk together soy sauce, sesame oil, brown sugar, minced garlic, and ginger in a bowl. Add chicken and marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat with one tablespoon of sesame oil. Add the marinated chicken and cook for 6-8 minutes until golden brown.
  4. Add the vegetables and stir-fry for an additional 3-5 minutes until crisp-tender.
  5. Pour in the reserved marinade and simmer for another 2-3 minutes until thickened.
  6. Serve over steamed rice and top with sesame seeds.
