- Place chicken, onions, and garlic in the slow cooker. Season with Tajin, chili powder, kosher salt, and pepper. Cook on low for 6 hours.
- Stir in corn, Rotel tomatoes, sour cream, Greek yogurt (or cottage cheese or mayo), cilantro, and additional salt and pepper. Continue cooking on low for 1 to 2 hours, stirring occasionally.
- Garnish with extra Tajin, cilantro, and cotija cheese. Serve with optional toppings such as jalapeños, crushed Fritos or tortilla chips, and hot sauce.
