  • 2 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • ½ Cup Unsalted Butter Melted and Cooled
  • 1 Cup Granulated Sugar
  • 2 Eggs
  • 2 Teaspoons Vanilla Extract
  • ½ Cup Buttermilk
  • ¼ Cup Sour Cream
  • ½ Cup Rainbow Sprinkles
Vanilla Cream Cheese Frosting
  • 4 Ounces Cream Cheese Room Temperature
  • 4 Tablespoons Unsalted Butter Room Temperature
  • 2 Cups Powdered Sugar
  • 1 Teaspoon Vanilla Extract
Homemade Rainbow Sprinkle Mix
  • ¼ Cup Rainbow Jimmies
  • ¼ Cup Rainbow Nonpareils
  • ¼ Cup Rainbow Confetti Sprinkles

Method
 

Funfetti Snack Cake
  1. Preheat the oven to 350°F and prepare a 9-inch square cake pan with baking spray and parchment paper.
  2. Combine the melted butter, granulated sugar, eggs, vanilla extract, buttermilk, and sour cream in a large bowl, whisking until smooth and fully combined.
  3. Add the flour, baking powder, and salt, then whisk until the mixture is smooth and creamy.
  4. Fold the rainbow sprinkles into the cake batter and mix until fully incorporated.
  5. Pour the batter into the prepared pan and bake for 20 minutes or until a cake tester comes out clean.
  6. Remove the cake from the oven and allow it to cool for 30 minutes to 1 hour before icing.
Vanilla Cream Cheese Frosting
  1. While the cake cools, cream the cream cheese and butter together until smooth, scraping down the sides of the bowl as needed.
  2. Add the vanilla extract and powdered sugar, then continue mixing until the frosting is light, fluffy, and creamy.
  3. Spread the frosting evenly over the top of the cooled cake until fully covered.
  4. Decorate the perimeter of the cake by sprinkling it with the rainbow sprinkle mixture.
