Funfetti Snack Cake
- Preheat the oven to 350°F and prepare a 9-inch square cake pan with baking spray and parchment paper.
- Combine the melted butter, granulated sugar, eggs, vanilla extract, buttermilk, and sour cream in a large bowl, whisking until smooth and fully combined.
- Add the flour, baking powder, and salt, then whisk until the mixture is smooth and creamy.
- Fold the rainbow sprinkles into the cake batter and mix until fully incorporated.
- Pour the batter into the prepared pan and bake for 20 minutes or until a cake tester comes out clean.
- Remove the cake from the oven and allow it to cool for 30 minutes to 1 hour before icing.
Vanilla Cream Cheese Frosting
- While the cake cools, cream the cream cheese and butter together until smooth, scraping down the sides of the bowl as needed.
- Add the vanilla extract and powdered sugar, then continue mixing until the frosting is light, fluffy, and creamy.
- Spread the frosting evenly over the top of the cooled cake until fully covered.
- Decorate the perimeter of the cake by sprinkling it with the rainbow sprinkle mixture.
- Serve immediately or store in an airtight container until ready to serve.
Homemade Rainbow Sprinkle Mix
- Mix the assorted rainbow sprinkles together in a small bowl.
- Store in an airtight container until ready for use.

Notes
Flour Substitution: I always reach for cake flour when I want that tender, melt in your mouth texture, but if you only have all purpose on hand, just replace two tablespoons of it with corn
