Ingredients
  

  • 4 oz dried ribbon noodles, ramen, or spaghetti (115g)
  • 2 tbsp chili oil (homemade or store-bought)
  • 1 tbsp soy sauce
  • 1 tbsp Chinese black vinegar or rice vinegar
  • 2 cloves garlic finely minced
  • 1/2 tsp sugar
  • 1/2 tsp sesame oil (optional)
  • Pinch salt
  • chopped scallions and sesame seeds for garnish

Method
 

  1. Cook noodles according to package instructions. Drain them, rinse briefly under cold water, and set aside.
  2. Combine minced garlic, soy sauce, vinegar, sugar, sesame oil, and salt in a heatproof bowl.
  3. Warm chili oil until shimmering (not smoking). Carefully pour it over the garlic mixture to release the aroma.
  4. Add the cooked noodles and toss thoroughly until evenly coated with the sauce.
  5. Top with scallions and sesame seeds. Serve immediately while hot.
