  • 1 lb chicken thighs boneless, skinless
Tahini Dressing Ingredients
  • ¼ cup tahini for dressing
  • 2 tablespoon fresh lemon juice for dressing
  • 1 clove garlic minced, for dressing
For Garnish
  • cherry tomatoes for garnish
  • cucumber diced, for garnish
  • red cabbage shredded, for garnish
  • fresh parsley chopped, for garnish

Method
 

Preparation Steps
  1. Whisk the olive oil, cumin, coriander, smoked paprika, turmeric, garlic powder, onion powder, sea salt, black pepper, and lemon juice in a mixing bowl until thoroughly combined.
  2. Coat the chicken thighs in the marinade, then cover and refrigerate for 30 minutes to 2 hours.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F.
  5. Remove the chicken from the heat, let it rest for 5 minutes, and slice into strips.
  6. Combine the tahini, lemon juice, minced garlic, and water in a separate bowl and whisk until smooth.
  7. Distribute the sliced chicken among serving bowls and top with cherry tomatoes, cucumber, red cabbage, and fresh parsley.
  8. Drizzle the creamy tahini dressing over each bowl and serve.
