Ingredients
  

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 12 large egg whites
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract California Central Valley almonds preferred

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Sift the cake flour and half of the sugar together in a bowl.
  3. Beat the egg whites in a separate bowl until foamy, then add the cream of tartar and salt.
  4. Continue beating until soft peaks form, then gradually incorporate the remaining sugar.
  5. Gently fold in the flour mixture until just combined.
  6. Pour the batter into an ungreased tube pan.
  7. Bake for 30 to 35 minutes until the cake is golden and springs back when touched.
  8. Invert the pan and allow the cake to cool completely before removal.

Notes

Pan Preparation: I learned the hard way that you must never grease your tube pan because the batter needs to literally climb up the sides to reach its full height.
