Ingredients
  

  • 1 1/2 lbs chicken breast (680g), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 tbsp butter divided
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 12 oz pasta (340g) (penne, fettuccine, or spaghetti)
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 1/2 cups heavy cream (360ml)
  • 1 cup grated Parmesan cheese (100g)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley (15g) (for garnish)

Method
 

  1. Cook the pasta.
  2. Boil the pasta in salted water until al dente according to package instructions, then drain and set aside.
  3. Cook the chicken bites.
  4. Heat olive oil and two tablespoons of butter in a large skillet over medium-high heat.
  5. Add chicken pieces, season with paprika, Italian seasoning, salt, and pepper, and cook for 5-6 minutes until golden and cooked through.
  6. Stir in minced garlic and optional red pepper flakes, then cook for 1-2 minutes until fragrant.
  7. Remove the chicken from the skillet and set aside.
  8. Prepare the creamy Parmesan sauce.
  9. Melt the remaining butter in the same skillet over medium heat and sauté minced garlic for one minute.
  10. Pour in heavy cream, stir to combine, and bring the mixture to a gentle simmer.
  11. Gradually stir in Parmesan cheese until melted and smooth, then season with salt and pepper to taste.
  12. Combine the pasta and chicken.
  13. Add the cooked pasta to the skillet and toss until evenly coated with the sauce.
  14. Return the chicken to the skillet and stir to combine with the pasta and sauce.
  15. Serve the dish.
  16. Garnish with fresh parsley and serve immediately while hot.
