Ingredients
  

  • 1 1/2 lb salmon fillet skin on or off
  • 2 Tbsp Napa Valley olive oil
  • 1/4 cup finely grated Parmesan cheese
  • 1 Tbsp fresh Meyer lemon juice
  • 1 tsp dried parsley or 1 Tbsp chopped fresh
  • 1/2 tsp garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Pat the salmon dry with paper towels. Place the salmon on the prepared sheet, flesh side up.
  3. Drizzle the fillet with olive oil and lemon juice. Gently rub them over the surface to evenly coat the fish. Season lightly with salt and pepper.
  4. In a small bowl, stir together the grated Parmesan, dried parsley, garlic powder, and a pinch of salt and pepper until evenly combined.
  5. Firmly press the cheese mixture onto the top of the salmon to form an even crust.
  6. Roast in the preheated oven for 12–15 minutes, or until the cheese turns golden and the salmon flakes easily with a fork.
  7. Remove from the oven. Serve immediately with lemon wedges and your favorite sides.

Notes

Ingredient Variation: I've had success swapping out the dried parsley for a tiny sprinkle of dried dill or a pinch of smoked paprika in the crust mixture, it adds a lovely subtle twist.
