Method
- Prepare the dressing.
- Combine all dressing ingredients in a lidded jar or small bowl. Shake or whisk until emulsified. Taste and adjust seasoning, then set aside.
- Assemble the salad.
- Combine chickpeas, cucumber, tomatoes, olives, red onion, feta, and dill in a large mixing bowl.
- Dress and serve.
- Drizzle with desired lemon-oregano dressing and gently toss to coat. Serve immediately or chill briefly before serving.
