- Whisk mayonnaise, Thai sweet chili sauce, honey, and sriracha until smooth to create the bang bang sauce.
- Combine vegetable oil, paprika, garlic powder, salt, and pepper in a large bowl.
- Add chicken cubes and toss until evenly coated.
- Arrange chicken in a single layer in the air fryer basket.
- Cook at 400°F for 11-12 minutes, flipping halfway through.
- Transfer the cooked chicken to a bowl and toss with half the bang bang sauce while hot.
- Add 1 cup warm rice to each of four bowls.
- Arrange cabbage, carrots, and cucumber in colorful sections over the rice.
- Top with sliced avocado and the saucy bang bang chicken.
- Drizzle with the remaining sauce and garnish with cilantro and sesame seeds.
