Measure olive oil into a skillet. Place it on the stovetop and turn the heat to medium.
While the oil heats, dice the onion and chop the cilantro. Set the cilantro aside. Add the onion to the pan and sauté for 5-10 minutes.
Drain and rinse the black beans. Add them to the pan along with the shredded chicken, chopped cilantro, taco seasonings, and water. Mix until all ingredients are well combined and heat thoroughly.
Roughly chop the greens and lay a bed of lettuce in each serving bowl.
Add the meat mixture and any desired toppings.
Serve with crispy tortilla chips (optional but delicious). Enjoy!
