  • 1 packet taco seasoning
  • 1 cup sour cream
  • ½ cup salsa
  • 4 cups cooked white rice about 1.5 cups raw
  • 2 cups diced chicken cooked
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 bell pepper chopped
  • 1 cup shredded tex mex cheese or Mexican cheese
For Serving
  • Lime wedges

Method
 

  1. Stir together the taco seasoning, sour cream, and salsa in a small bowl and set aside.
  2. Divide the white rice among four bowls and top each with equal portions of chicken, black beans, corn, pepper, and cheese.
  3. Add the sauce, toss when ready to eat, and serve with optional lime wedges.
